What are Google AI Overviews?

In short

AI Overviews are the AI-written summaries Google shows at the top of some search results, with links to the pages they draw on. They are built from Google's normal search index.

Because AI Overviews come from the same index as regular results, the pages that appear in them are crawled by Googlebot, not by a separate AI crawler. Blocking Google-Extended does not remove a site from them.

To limit what Google can quote from a page, in AI Overviews or classic snippets, use snippet controls such as nosnippet, data-nosnippet or max-snippet.

No. Blocking AI training crawlers, including Google's own Google-Extended token, doesn't change your Google rankings, and it doesn't remove you from AI Overviews or AI Mode. Only blocking Googlebot does that, and that removes you from Google Search altogether.
